Meatloaf is a classic comfort food that has been enjoyed for generations. This particular recipe takes the traditional dish to the next level by incorporating liver into the mix, adding an extra boost of nutrition to every delicious bite. The beef mince and liver come together to create a savory and satisfying flavor that will have your taste buds singing.

The addition of liver to this recipe is not only delicious but also incredibly nutritious. Liver is an excellent source of vitamins A, B12, and iron, making this meatloaf a power-packed meal that will keep you feeling full and satisfied. The eggs, coconut flour, and mixed herbs bind everything together perfectly, creating a moist and tender meatloaf that is sure to become a new family favorite.

A closer look at the nutritional power of liver

Vitamin A, also known as retinol, is important for maintaining healthy vision, skin, and immune function. It also plays a role in growth and development. Liver is one of the best dietary sources of vitamin A, providing more than 100% of the daily recommended intake in just a 100-gram serving.

Vitamin B12 is essential for the formation of red blood cells and the proper functioning of the nervous system. It is found almost exclusively in animal-based foods, and liver is one of the richest sources. A 100-gram serving of liver provides more than 7 times the daily recommended intake of vitamin B12.
Iron is an essential mineral that plays a crucial role in the formation of hemoglobin, the protein in red blood cells that carries oxygen to the body's tissues. Liver is one of the best dietary sources of iron, providing more than 7 times the daily recommended intake in just a 100-gram serving.

Serving suggestions

This dish is perfect for a cozy weeknight dinner - here's a few suggestions to round out your low carb meal: 

  1. Serve the meatloaf with a side of roasted vegetables such as broccoli, cauliflower, or green beans.
  2. Make a salad with mixed greens, avocado, and a vinaigrette dressing. The salad will complement the meatloaf nicely and add a fresh element to the dish.
  3. Make a cauliflower mash as a low-carb alternative to traditional mashed potatoes. Simply steam or boil cauliflower florets until tender, then mash them with butter and seasonings of your choice.
  4. Serve the meatloaf with a side of sautéed spinach or kale. These leafy greens are packed with nutrients and low in carbohydrates.
  5. Make a "lettuce wrap" by placing a slice of meatloaf in a lettuce leaf, and top it with a dollop of sour cream or a sprinkle of cheese.
  6. Serve meatloaf with a side of zucchini noodles or spaghetti squash as a low-carb alternative to pasta.
  7. Make a meatloaf bowl by placing a slice of meatloaf on top of a bed of cauliflower rice and add some sautéed vegetables.
