Choose your preferred meat.
This is lamb. You could try beef, chicken, duck, or kangaroo.
Chop your in-season herbs finely (this video uses rosemary).
Add garlic, very generously salt, pepper, olive oil.
Let rest for 2 hours, up to 48.
Note: Garlic is NOT fodmap friendly. Avoid garlic if you have these intolerances. Swap for the green part of a spring onion or garlic infused olive oil (strained).
Don’t fear salt! Salt is an essential nutrient.
Salt will tenderize or soften the meat, making it succulent. The herbs will infuse their flavour.
Cook in the oven or on the BBQ.
