In addition to providing a good amount of protein and healthy fats, these tacos are also a good source of several vitamins and minerals. Eggs, in particular, are an excellent source of nutrients such as vitamin A, vitamin D, vitamin E, vitamin B12, folate, and selenium. They are also a good source of choline, an often underappreciated and lesser-known nutrient that is important for brain function.

Choline: The Forgotten Nutrient

Choline is a nutrient that is involved in several important bodily functions, including the synthesis of neurotransmitters, the maintenance of cell membranes, and the transport of fats in the body. It is also essential for the development of the brain and nervous system in fetuses and infants. Despite its importance, choline is often not included in standard multivitamins, and many people do not get enough of it in their diet.

Egg-cellent Nutrients

Protein in eggs

Here is the amino acid contnet of 2 large eggs.

Eggs are a complete source of protein, meaning that they contain all of the essential amino acids that the human body needs.
Some of the amino acids found in eggs include:
  • Leucine: This amino acid is important for muscle growth and repair.
  • Lysine: This amino acid is involved in the production of collagen, a protein that is important for skin, bone, and joint health.
  • Methionine: This amino acid is important for liver detoxification and the synthesis of other amino acids.
  • Phenylalanine: This amino acid is a precursor to the neurotransmitter dopamine, which plays a role in mood and cognitive function.

Eggs are an excellent source of high-quality protein and amino acids, making them a valuable addition to any healthy diet.

Vitamins

Eggs are a good source of several vitamins, including:

  • Vitamin A: This vitamin is important for vision, immune function, and skin health.
  • Vitamin D: This vitamin is important for bone health and the absorption of calcium.
  • Vitamin E: This vitamin is an antioxidant that helps to protect cells from damage.
  • Vitamin B12: This vitamin is important for the production of red blood cells and the proper functioning of the nervous system.
  • Folate: This vitamin is important for the synthesis of DNA and the production of red blood cells.
